Pistachio Pudding
Ingredients:
- 1 ripe avocado (peeled)
- ¼ cup pistachio (pre-soaked and strained)
- 5 tbsp maple syrup
- 5 tbsp water
- 1 tsp vanilla extract
- ½ tsp almond extract
- 1 tsp lemon juice
- 1/8 tsp salt
Instructions:
- Blend all the ingredients into a smooth consistent paste.
- Once the mixture is smooth, transfer it to small pudding jars, and cover them and place them in the freezer to chill. When ready to eat, garnish with some pistachio flakes.
